Some of the dishes you have to try are the "timballo" (an iconic lasagna-like dish made with layers of pasta, meat, eggs, and cheese) and "maccheroni alla chitarra" (fresh pasta cut with a special instrument and served with sauces such as lamb ragout). But perhaps the most classic is the "arrosticini" (roasted lamb skewer with a juicy and tender flavour).
